Liza Marleen Ullmann untersucht die soziodemografischen, ernährungs- und umweltpsychologischen Faktoren, die ausschlaggebend für die Akzeptanz deutscher Konsumenten von Insekten als Nahrungsmittel am Beispiel des Buffalowurms (Alphitobius diaperinus) im Sinne einer nachhaltigen Alternative zu konventionellem Fleisch sind. Im Rahmen einer quantitativen Online-Fragebogenstudie gelingt es der Autorin, herauszufinden, dass die Akzeptanz gegenüber unverarbeiteten, essbaren Insekten geringer ist als die gegenüber verarbeiteten Insekten. Dieses Buch leistet einen wichtigen Beitrag, Nahrungsmittel aus Insekten zukünftig auch in der deutschen Esskultur zu etablieren und trägt zur „Bildung für Nachhaltige Entwicklung“ (BNE) bei, welche alle Menschen zu verantwortungsvollem, zukunftsfähigem und nachhaltigkeitsbewusstem Denken und Handeln befähigen soll.
