Foul Deeds and Fine Dying: A Pellegrino Artusi Mystery

by Marco Malvaldi

Pellegrino Artusi, the great gastronome and amateur detective, is back. It is 1900 and Pellegrino's famed cookbook is in its fifth edition. Flushed from his fortune and success, our hero joins a weekend party at the Tuscan castle of the wealthy agricultural entrepreneur, Secondo Gazzolo. In this castle of winding corridors, secret passageways and clandestine meetings, Pellegrino finds a curious collection of guests, each with their own purpose for being there. But when one of the party is found dead in his locked bedroom, seemingly the victim of suffocation, it is up to Pellegrino and his old friend, the detective Ispettore Artistico, to solve what really happened, for the science of food is every bit as complex, rigorous and tantalising as the sublime art of investigation.A perfect "locked room mystery" that will have your brain and your tastebuds tickled.Translated from the Italian by Howard Curtis

The Founder's Tale: A Good Idea and a Glass of Malt

by Pip Hills

This is the story of how one man, with a bit of help from his friends, created a revolution in the hitherto staid world of Scotch Whisky. But by creating the Scotch Malt Whisky Society, he gave whisky drinkers access to the finest distilled liquor on the planet – and what’s more, he had a great time doing it.The book is a collection of stories about Pip and his friends and how they brought Scotland’s finest product to a waiting world. It begins in a small farm in Aberdeenshire and moves through high places (The World Trade Centre) and low (a jungle dive in the South Seas), with the help of the famous and the obscure, the good, the bad and the mildly delinquent. There are high mountains and wild seas, and a trip (with whisky) to Communist eastern Europe in a vintage Lagonda.

Four Kitchens: My Life Behind the Burner in New York, Hanoi, Tel Aviv, and Paris

by Lauren Shockey

At the French Culinary Institute, Lauren Shockey learned to salt food properly, cook fearlessly over high heat, and knock back beers like a pro. But she also discovered that her real culinary education wouldn't begin until she actually worked in a restaurant. After a somewhat disappointing apprenticeship in the French provinces, Shockey hatched a plan for her dream year: to apprentice in four high-end restaurants around the world. She started in her hometown of New York City under the famed chef Wylie Dufresne at the molecular gastronomy hotspot wd-50, then traveled to Vietnam, Israel, and back to France. From the ribald kitchen humor to fiery-tempered workers to tasks ranging from the mundane (mincing cases of shallots) to the extraordinary (cooking seafood on the line), Shockey shows us what really happens behind the scenes in haute cuisine, and includes original recipes integrating the techniques and flavors she learned along the way. With the dramatic backdrop of restaurant life, readers will be delighted by the adventures of a bright and restless young woman looking for her place in the world.

Francesco's Kitchen: An Intimate Guide To The Authentic Flavours Of Venice

by Francesco Da Mosto

Francesco da Mosto follows his bestselling books on Venice and Italy with his personal quest for the authentic flavours and food of Venice. In this superbly illustrated book Francesco invites us into his family's kitchen in his 16th-century Palazzo in the heart of the city where he acts as the perfect guide to the unique culinary character of traditional Venetian cooking. Francesco shows us how to prepare 150 classic Venetian recipes ranging from Antipasti, sauces, soups and fish, to meats, pasta and puddings. He demonstrates how Venetian food is a fabulous fusion of ingredients brought together over centuries as merchants and traders travelled the Mediterranean. The ancient broeto (stock) and mollusc soups testify to this, as does the richness and variety of dishes based on fish, roasts, grills, tasty deep fried delicacies and sauces. Each chapter is introduced with the history and origins of the recipes and throughout there are personal reminiscences by Francesco of his first encounters with his favourite dishes. As Francesco is keen to tell, his passion for cooking authentic Venetian food comes from home: 'When I start talking about cooking, it is impossible to forget my father, his love and imagination for all things culinary. He has never feared unusual combinations of ingredients and seasonings, and I have always been a willing guinea pig.'

Franco Manca, Artisan Pizza to Make Perfectly at Home: To Make Perfectly At Home

by Giuseppe Mascoli Bridget Hugo

Every critic, blogger and Londoner has sung the praises of Franco Manca, whose pizzas are 'the best in Britain' (Observer). The owner, Giuseppe Mascoli, knows that the best pizza in Italy comes from Naples and therefore, as an expat Neopolitan himself, he has gone back to its roots, where making pizza is all about simple things (bread, tomato, cheese) and simple steps (make the dough, let it rise, flatten it, add topping, bake in the oven), all using the best ingredients to produce pizza of exceptional quality. Aimed at the home cook who doesn't have a traditional woodburning oven, Giuseppe has tailored his recipes so you can use a pizza stone or a heavy baking tray and still get great results. His famous, slow-rising sourdough recipe produces a soft and easily digestible crust, there are 50-60 recipes with seasonal variations, plus chapters on fritti (fried starters) and salads and also tips and techniques for making your own flavoured oils, preserving your tomatoes and curing your meat. Without a doubt, this is the closest you'll come to the real deal in your home kitchen, and in your personal quest for perfect pizza.

Franco's Famine: Malnutrition, Disease and Starvation in Post-Civil War Spain

by Miguel Ángel del Arco Blanco and Peter Anderson

At least 200,000 people died from hunger or malnutrition-related diseases in Spain during the 1940s. This book provides a political explanation for the famine and brings together a broad range of academics based in Spain, the United Kingdom, the United States and Australia to achieve this. Topics include the political causes of the famine, the physical and social consequences, the ways Spaniards tried to survive, the regime's reluctance to accept international relief, the politics of cooking at a time of famine, and the memory of the famine. The volume challenges the silence and misrepresentation that still surround the famine. It reveals the reality of how people perished in Spain because the Francoist authorities instituted a policy of food self-sufficiency (or autarky): a system of price regulation which placed restrictions on transport as well as food sales. The contributors trace the massive decline in food production which followed, the hoarding which took place on an enormous scale and the vast and deeply iniquitous black market that subsequently flourished at a time when salaries plunged to 50% below their levels in 1936: all contributing factors in the large-scale atrocity explored fully here for the first time.
